What is a Kolache?
Pronounced ko-LAH-chee, this traditional Czech pastry is a soft yeast dough that holds a portion of fruit or cheese filling. It was served at weddings in central Europe as far back as the 1700's. A staple in Czech culture, the kolache arrived in the United States in the mid 1800's with the thousands of Czech immigrants that settled in the central and south-central "Hill Country" of Texas. These new Czech-Texans, began to shake things up and took advantage of the new flavors they found in their new home; taking savory meats and melty cheeses and wrapping it in their delicious kolach dough. The new version spread life wildfire from the foothills of Texas across the vast plains and to every corner of the state. Today, the "Texas Kolache" is a standard breakfast treat and is quickly gaining popularity in other parts of the country.

Awesome little bakery in Loveland. They have quite the selection of treats including a dozen or so flavors of kolaches. I had a strawberry kolache with orange citrus cream cheese. It was phenomenal. I could've easily eaten a dozen of them if they were put in front of me. Very unique flavor and perfect tasting dough with the right consistency. If I lived nearby, I would surely be a regular.

Came in to try what kolashes were about and didn't disappoint! Yummy buns of a meal and easy to eat hand food. Had the mushroom brie and green chili eggs. I ordered two thinking one looked small but upon grabbing the first one for a bite, I felt the heft in this and was filled pretty good. I'm a fan!

We had been wanting to try this bakery for a while and finally did this morning. The lady working the counter was SO sweet and friendly. She was very informative and helped us order some kolaches and a cinnamon roll. All of the things we tried were SO delicious, but our fave was the cream cheese kolache. She warmed them up for us as well. Plenty of places to sit and enjoy a treat. Definitely give them a try!

This place is frickin amazing. Everything I've had is so so good. The owners are so kind and friendly and it's a cute little place to get some breakfast that is inexpensive but filling. I live in Longmont but will make the trek (30 minute drive) on the weekend. Cannot recommend enough, 5/5 stars. Love these guys.

The best and ONLY place in town with kolaches! We tried them out today, and they were delicious. The poppy seed, strawberry, and breakfast sausage were all filling and full of flavor! We will definitely be back!
